Chef Mike Schroeder’s culinary story stretches across North America and far beyond, shaped by a life spent chasing flavour, culture, and meaningful connection. Originally beginning his journey at home in Canada, Mike has cooked his way from coast to coast, gathering techniques, traditions, and inspiration from every kitchen, campfire, and community he’s encountered.
His travels abroad—through the vibrant markets of Europe and the sun-kissed coasts of the Caribbean—deepened his appreciation for regional ingredients and time-honoured cooking methods. Whether studying rustic European breads, exploring Caribbean spice blends, or learning from local chefs and foragers, Mike brings each experience back to his own culinary philosophy.
That philosophy is grounded in his 3Fs: Field, Forage, and Family.
Field represents his commitment to sourcing locally and sustainably, building menus that respect the land and the people who cultivate it.
Forage reflects his passion for discovering wild ingredients, embracing the seasons, and creating dishes that are rooted in nature.
Family is the heart of everything he does—honouring the people who gather around his table, the food traditions passed between generations, and the connections strengthened through sharing a meal.
Today, Chef Mike Schroeder blends his global experiences with his deep respect for local foodways, creating dishes that tell stories—stories of travel, heritage, and the simple joy of cooking for the people you love.

Deborah Peddle-Hann is the founder of Healthy Hiking and Journey to Wellness, where she helps midlife adventurers build the strength, confidence, and know-how to hike and explore the backcountry safely, without feeling overwhelmed or intimidated. A long-time fitness and wellness professional and passionate hiking advocate, Deborah specializes in bridging the gap between day hiking and overnight adventures, especially for those who are curious but unsure where to start. At the Atlantic Outdoor Sports and RV Show, Deborah is excited to help people feel more confident about fueling their body, caring for their health on the trail, and realizing that you don’t have to be extreme, fearless, or “hardcore” to enjoy incredible outdoor adventures.
